We all know very well what honey is. Honeybees collect the nectar from flowers; store it in a honey-bladder where, with the help of enzymes, the processing of nectar into honey starts. On the arrival into the beehive, they store it into honeycomb cells where the processing of nectar into honey finishes.
Bees principally use honey as the source of energy, since it mostly contains fructose and glucose. Honey also consists of minerals: iron, copper, manganese, silicon, chlorine, calcium, potassium, sodium, phosphorus, aluminium, magnesium. There are also acids: gluconic, formic, acetic, malic, citric, and lactic acid. Apart from that, there are vitamins, P, K, C, and A. We have learned to classify honey according to the plants bees collect the nectar from, so we have: Acacia, Linden, Sunflower, Meadow honey, etc. It is mostly classified according to the taste.

Honey is actually divided into five categories, by the number of plant particles, Perga (fermented
pollen grains), inside the honey itself. The more of it, the higher is the quality of honey.
- I category consists of the honey poor in Perga – up to 20,000 particles.
- II category signifies the medium quantity of plant particles of Perga – 20,000 to 100,000 per 10 grams of honey.
- III category consists of the sorts having plant particles of Perga from 100,000 to 500,000 per 10 grams of honey.
- IV category contains the sorts with 500,000 to 1,000,000 plant particles of Perga per 10 grams of honey. These are, for example, some sorts of forest honey.
- V category represents the honey extremely abounding in plant particles of Perga and that is the honey obtained by the process of pressing frames with honey and Perga.
It can be seen from this categorization that the fermented pollen or Perga is what actually gives honey the quality. Honey gives bees the energy, and PERGA provides everything else for their development and life. The lower quantity of PERGA goes into honey, while most of it is stored by bees in special honeycomb cells.
